Afternoon Snack: Tomato & Mozzarella Salad

During the cold winter months I naturally crave hearty foods like stews and baked dishes, however I find that every once in a while a lighter dish is just what I need. Over the weekend I made a tomato and mozzarella salad and it hit the spot. Simply slice some tomatoes or cherry tomatoes, add some slices of mozzarella, sprinkle some olive oil over the top, add a little salt, pepper, and basil sprigs and enjoy. I opted to put mine on a bed of spinach leaves and it was delicious. Can you tell I'm craving summer already!
